These beans come from a cooperative of farms in Huehuetenango, a city and municipality in the highlands of western Guatemala.
The farms are all members of ADESCAFE, the sustainable coffee association of Guatemala. ADESCAFE's mission is based on the principles of sustainability which in practice means responsibility to the environment, fair distribution of profits and a strong commitment to quality and long-term relationships.
All of the coffee produced by ADESCAFE qualifies as Strictly Hard Bean (SHB) which means the coffee must be grown at elevations of over 1350 metres above sea level. The conditions at these altitudes are ideal for growing high quality coffee and the cooperative will only produce beans that score at least 82 out of 100 on the coffee quality scale.
Roasted to a medium level, this is a great all-rounder. Lots of the classic flavours found in coffees from Central America with loads of chocolate and cocoa flavours and a toffee sweetness.
